Ingredients
- 2 1/4 cups plain flour
- 2 tsp baking powder
- 1 tsp baking soda
- pinch salt
- 3 eggs
- 1/4 cup caster sugar
- 2 cups buttermilk
- 2 tbsp melted butter, plus extra for frying
- 4 tbsp manuka honey
- 100 gsour cream, room temperature
- 100 g hokey pokey
- 1apple, sliced, to serve
- icing sugar, to serve

Cooking Steps
- Sift flour, baking powder and baking soda and salt into a mixing bowl and whisk to combine.
- Beat the eggs and sugar, plus one of the tablespoons of honey, in another bowl until thick and pale.
- Make a well in the dry ingredients and add the egg mixture, along with the buttermilk. Whisk together until smooth.
- Heat a large non-stick frypan over a low heat. Add a small knob of butter to the pan, swirl then pour out into a small dish.
- Add about 2 tablespoons of the mixture to the pan and cook until bubbles appear on the surface, about a minute. Flip over and cook the other side until golden.
- Place remaining honey into a bowl and combine with the sour cream.
- Serve pancakes with lashings of the honey and sour cream mixture. Drizzle with honey and dust with icing sugar, before garnishing with apple slices.
