Manuka Honey Pancakes

Ingredients

  • 2 1/4 cups plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • pinch salt
  • eggs
  • 1/4 cup caster sugar
  • 2 cups buttermilk
  • 2 tbsp melted butter, plus extra for frying
  • 4 tbsp manuka honey
  • 100 gsour cream, room temperature
  • 100 g hokey pokey
  • 1apple, sliced, to serve
  • icing sugar, to serve

Cooking Steps

  1. Sift flour, baking powder and baking soda and salt into a mixing bowl and whisk to combine.
  2. Beat the eggs and sugar, plus one of the tablespoons of honey, in another bowl until thick and pale.
  3. Make a well in the dry ingredients and add the egg mixture, along with the buttermilk. Whisk together until smooth.
  4. Heat a large non-stick frypan over a low heat. Add a small knob of butter to the pan, swirl then pour out into a small dish.
  5. Add about 2 tablespoons of the mixture to the pan and cook until bubbles appear on the surface, about a minute. Flip over and cook the other side until golden.
  6. Place remaining honey into a bowl and combine with the sour cream.
  7. Serve pancakes with lashings of the honey and sour cream mixture. Drizzle with honey and dust with icing sugar, before garnishing with apple slices.
